Chocolate-Cherry Skillet Cake ~ Pampered Chef Recipe

Ingredients: 3 egg whites, lightly beaten 1 can (21 oz or 520 mL) cherry pie filling ¼ cup (50 mL) water ½ tsp (2 mL) almond extract 1 pkg (18.25 oz or 510 g) devil’s food cake mix 1 jar (11.75 oz or 250 mL) chocolate ice cream topping 1/3 cup (75 mL) toasted sliced almonds Vanilla frozen yogurt or thawed, frozen fat-free whipped topping (optional) Directions: 1. Preheat oven to 350ºF (180°C). Lightly spray (12″/30 cm) Skillet with oil. Whisk egg whites in large bowl; add pie filling, water and almond extract. Add cake mix; mix until well blended. Pour batter into Skillet, spreading evenly. 2. Bake, uncovered, 25–30 minutes or until wooden pick inserted in center comes out clean.Carefully remove from oven using Oven Mitts; cool 10 minutes. Loosen edges of cake and carefully invert cake onto large, heat-safe serving plate. 3. Stir ice cream topping until smooth; carefully spread evenly over top of cake. Sprinkle almonds evenly around top edge of cake. Cut into wedges. Serve warm with frozen yogurt or whipped topping, if desired. Strawberry Cream Cheese Cobbler Recipe

I’ve been spending a bit of time on Pinterest lately. Ok, honestly?  I’ve been spending a lot of time on there. It’s so easy to get drawn into the beautiful pictures, amazing photography, incredible recipes and cool as heck craft projects. I found this recipe  yesterday and thought “Wow! I have to try this!”  So I pinned to my Recipes to Try board. Then I asked my husband if he thought strawberry cream cheese cobbler sounded good. His reply was an enthusiastic “Yes!”. I checked the recipe and compared the ingredients to my cupboards. Don’t you know … I had everything but fresh strawberries. Then I remembered I had some frozen strawberries in the freezer. I had intended to use them for smoothies … but since I’m not making many cold, frozen smoothies in Ohio in January, they might just serve my purposes. The thing I like about cobblers, is that they are warm, gooey and sweet. They remind me of winter days when I was a girl and my mom would pull some of last summer’s fruit out of the freezer and make up a cobbler. Tortilla Soup ~ 1992 Women’s Circle Home Cooking

Nearly every era through American culture has a defining set of habits, fashion, and foods. One of the fashionable foods of the 1990s was tortilla soup. This recipe from Women’s Circle Home Cooking was published in 1992. Tortilla Soup Serves 4-6 1 (18 oz) jar Ortega Mild Green Chile Salsa 1 (13 ½ oz) College Inn Chicken Broth 1 small zucchini, halved and sliced 1 cup cooked garbanzo 2 tablespoons Ortega Diced Jalapenos Tortilla Chips, coarsely broken ¾ cup shredded Monterey Jack cheese In saucepan, combine first 5 ingredients; simmer 5-7 minutes.
