    This smaller batch soup is smart. You can always double it easily for more people, but sometimes it gets tiring eating leftover soup for days when I make larger batches.

      I struggle with small batch cooking … I always think – “I’ll drop some of this in. And this would be good in the soup. Oh look, there’s a little of that … toss it in.” The next thing you know, I’ve got buckets of soup!

    Wow! I haven’t made a soup with black eyed peas before. This sounds so good. The addition of refried beans is really smart.

    This soup tasted like I cooked it for hours. I used 1 1/2 cans Great Northern beans. I like a thick bean soup, so I added the juice from one of the cans of beans into the soup. I also added 1 tsp low sodium chicken bouillon powder for a richer taste. If using regular bouillon, omit the salt. If your soup is not thick enough for your liking, just simmer uncovered until you get your desired thickness. This definitely makes 2 dinner sized servings. I will be keeping this recipe. Thank You for sharing.

      Thanks for the feedback!! I love your suggestion to use half the juice and the bouillon powder! Those are great tips.

      I’m glad that you found this to be two servings sized perfect. It’s hard to find recipes for two.
