Loaded Baked Sweet Potato

Holiday meals just got a whole lot better with this super side dish. 

Ingredients

  • 1 Sweet Potato
  • 1/2 cup Walnuts
  • 1/2 cup Coconut Flakes
  • 1/2 cup Graham Cracker Crumbs
  • 1/2 tsp Cinnamon
  • 1/2 TB Brown Sugar
  • 1 TB Maple Syrup

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Wash the sweet potato and pierce the skin with a sharp knife in several places.

  3. Bake sweet potato for 1 hour at 350 degrees. Potato will be done when you can insert a knife or fork easily. 

  4. Mix remaining ingredients in small bowl.

  5. Remove sweet potato from oven and slice in half lengthwise. 

  6. Top sweet potato with crumb mixture.
