Pecan Topped Sweet Potato Pie

Ingredients

  • 1 lb Sweet potato / yam cooked and peeled.
  • ¼ cup Butter
  • 14 ounce Sweetened condensed milk
  • 1 tsp Cinnamon
  • 1 tsp Orange peel
  • 1 tsp Vanilla
  • ½ tsp Nutmeg
  • ¼ tsp Salt
  • 1 Egg
  • 1 Graham cracker crust

Pecan topping

  • 1 Egg
  • 2 TB Dark corn syrup
  • 2 TB Brown sugar
  • 1 TB Melted butter
  • ½ tsp Maple flavoring
  • 1 cup Chopped pecans.

Instructions

  1. Preheat oven to 425.
  2. Beat hot sweet potatoes and butter until smooth.  
  3. Add sweetened condensed milk and remaining ingredients except crust.

  4. Mix well. Pour into crust.

  5. Bake 20 minutes, prepare topping.

  6. Remove pie from oven, reduce oven to 350. Spoon topping on pie.
  7. Bake 25 minutes or until set.

  8. Cool before serving.
