Broccoli Cheese Soup

A creamy soup, full of the flavors of roasted vegetables.

Ingredients

  • 1 small Onion
  • 1 Carrot
  • 1 stalk Celery
  • 2 TB. Olive Oil
  • 15 oz. frozen Broccoli
  • 4 c. Chicken Broth
  • ½ lb. Velveeta Cheese

Instructions

  1. Preheat oven to 250 degrees Fahrenheit.
  2. Chop the onion, carrot and celery into half inch pieces.
  3. Toss the chopped vegetables and the broccoli in the olive oil.
  4. Spread on a baking sheet. Place in the oven and roast at 250 degrees for 1 hour and 15 minutes.
  5. Remove the vegetables from the oven and place in a large saucepan.
  6. Add the chicken broth.
  7. Cut the Velveeta into small pieces and add to the saucepan.
  8. Simmer on low until cheese is melted. Stir occasionally to blend the ingredients together. (About 20 minutes)
