Herb Roasted Potatoes

This recipe is so easy, anybody can bake it, no matter how much prep time you have. Savory potatoes are a perfect side dish for fall and winter meals.

Ingredients

  • 2 lb Potatoes
  • 1/4 c Olive Oil
  • 1 c Parmesan Cheese
  • 1/4 c Herb Blend

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Wash potatoes.

  3. Cut potatoes into 1/2 inch pieces.

  4. Place in bowl and toss with oil.

  5. Coat baking dish with oil.

  6. Spread half of potatoes in baking dish.

  7. Sprinkle with half of grated Parmesan cheese and herb blend.

  8. Layer second half of potatoes and top with remaining cheese and herbs.

  9. Cover with aluminum foil.

  10. Bake at 350 degrees for one hour.

Recipe Notes

Change the flavor by changing the herb and spice blend you use. Try different herbs. Some of our favorites Rosemary & Thyme, Italian Spice Blend, and Ranch Dressing (powder).
