Ham and Bean Soup for Two

Ingredients

  • 1 small Onion
  • 1 Carrot
  • 1/2 cup Ham
  • 2 cup Black eye peas or navy beans
  • 1 cup Water
  • 1 cup Refried beans
  • salt & pepper

Instructions

  1. Dice the onion into very small pieces.

  2. Chop the carrot into small pieces. 

  3. Dice the ham into small pieces.

  4. Place a pat of butter in the bottom of a small saucepan, heat until melted. Add the onions and carrots. 

  5. Cook until the onions are translucent and the carrots are soft. 

  6. Add the ham, black eye peas, water and refried beans. Simmer until warm through. 

  7. Add salt and pepper to taste.
